      Ingredients

      • For the pumpkin:
      • 800g pumpkin, peeled and cut into 3cm chunks
      • 3 tablespoons olive oil
      • 4 tablespoons honey
      • 1 teaspoon sea salt
      • For the spice mix:
      • 1 tablespoon black seeds, nigella sativa
      • 1 teaspoon ground coriander
      • ½ teaspoon ground cumin
      • ¼ teaspoon black pepper
      • For garnish:
      • Extra honey for drizzling
      • Fresh herbs (optional)

      Directions

      1. Step 1

Preheat your air fryer to 200°C/400°F. This high temperature will help achieve those lovely caramelised edges we're after.

      2. Step 2

In a large bowl, combine the pumpkin chunks with olive oil, ensuring each piece is well coated. This will help achieve that gorgeous golden colour and prevent sticking.

      3. Step 3

Mix all the spice mix ingredients together in a small bowl. Sprinkle over the oiled pumpkin and toss gently to coat evenly. Don't worry if the black seeds don't stick perfectly they'll create a lovely crunchy topping.

      4. Step 4

Working in batches if necessary (don't overcrowd!), arrange the pumpkin pieces in a single layer in your air fryer basket. They need space to crisp up properly.

      5. Step 5

Cook for 15 minutes, then drizzle with half the honey and gently shake the basket to coat. The honey will help create that beautiful caramelised exterior.

      6. Step 6

Continue cooking for another 8-10 minutes until the pumpkin is tender when pierced with a fork and has lovely golden brown edges. The honey should be beautifully caramelised but watch carefully to prevent burning.

      7. Step 7

Transfer to a serving platter and drizzle with remaining honey while still hot. The warmth will help the honey spread beautifully.

      8. Step 8

Garnish with additional black seeds and fresh herbs if using. Serve immediately while piping hot.
