
Vibrant Honey Cucumber Smoothie Recipe

Ingredients
- 2 medium cucumbers, about 400g total - thoroughly washed, ends trimmed, and roughly chopped into 2cm chunks (no need to peel if skin is tender)
- 2 tablespoons raw honey, about 40g - preferably light and floral in flavour
- 240ml ice-cold filtered water, must be very cold for best texture and refreshment
- 4-6 ice cubes (about 100g), for extra chill and thickness
- Optional garnishes:
- 1 thin cucumber ribbon, for garnish
- Fresh mint leaves, for garnish
- Extra honey drizzle, for serving
Directions
Step 1
Prepare your cucumbers by giving them a thorough wash under cold running water, then pat them dry with a clean tea towel. Trim off both ends and chop the cucumbers into roughly 2cm chunks, this size is perfect for your blender to work efficiently and create that silky smooth texture we're after. If your cucumbers have particularly thick or bitter skin, feel free to peel them, but tender-skinned varieties like English cucumbers work beautifully with the skin on, adding gorgeous colour and extra nutrients.
Step 2
Add the chopped cucumber chunks to your blender first, this is important because the cucumber's high water content will help create the vortex needed for smooth blending. Pour in the ice-cold filtered water, the colder the better as this enhances the refreshing quality and helps the blender work more efficiently. Don't be tempted to skip chilling your water, room temperature liquid will give you a less vibrant, less refreshing result.
Step 3
Drizzle in your honey, letting it cascade over the cucumbers, and add your ice cubes on top. The honey might seem thick and stubborn now, but don't worry, the blending will distribute it beautifully throughout. If your honey has crystallised, warm it gently in a small bowl over warm water for 30 seconds until it flows freely, this ensures even sweetness in every sip.
Step 4
Secure your blender lid firmly and start blending on low speed for about 10 seconds to break down the larger chunks, then gradually increase to high speed. Blend for 45-60 seconds until the mixture is completely smooth and silky with no visible cucumber pieces remaining. You'll know it's ready when the smoothie has a gorgeous pale green colour and you can see tiny air bubbles throughout, giving it that lovely frothy top. If your blender struggles, stop and push the ingredients down with a spatula, then continue blending.
Step 5
Pour your vibrant smoothie into a tall glass immediately whilst it's ice-cold and at its most refreshing. If you'd like an extra smooth texture, strain it through a fine-mesh sieve, though this isn't necessary if you've blended it thoroughly. The smoothie should flow like liquid silk and have a consistency similar to a thin milkshake.
Step 6
Garnish your smoothie with a delicate cucumber ribbon (use a vegetable peeler to create this), a few fresh mint leaves for aromatic appeal, or a final drizzle of honey that will create beautiful golden streaks as it settles. Serve immediately whilst perfectly chilled, as cucumbers can separate slightly if left standing. This is where the magic happens, that first sip should be crisp, sweet, and incredibly refreshing.
