The natural caramel sweetness of dates complements the cool, juicy watermelon perfectly, making every bite a delightful contrast of textures and flavours. Learn how to make this quick and easy recipe!
Ingredients
- 12 large Medjool dates, pitted and halved lengthways (about 200g total, look for plump, moist dates with glossy skin)
- 300g seedless watermelon, cut into 1.5cm cubes (about 24 cubes, choose the sweetest, reddest part of the melon)
- 12 fresh mint leaves, washed and patted completely dry (optional but adds a lovely aromatic freshness)
- 1 tablespoon honey, warmed slightly for easy drizzling (optional, for extra sweetness and glossy finish)
- Pinch of flaky sea salt (optional, to enhance the natural sweetness)
- 12 wooden cocktail sticks or small bamboo skewers, for assembly
Directions
Step 1
Prepare your dates by gently opening each halved date and pressing it slightly to create a small cavity that will hold your watermelon cube perfectly. This is crucial for creating a stable base, so don't be shy about gently flattening the date slightly whilst keeping its natural boat shape intact. The dates should be at room temperature as this makes them softer and easier to work with. If your dates feel a bit firm, you can warm them between your palms for a few seconds to soften them naturally.
Step 2
Cut your watermelon into neat 1.5cm cubes, ensuring they're all roughly the same size so they sit beautifully on top of the dates. Pat each watermelon cube gently with kitchen paper to remove excess moisture, which helps prevent the bites from becoming soggy and ensures the honey will stick better if you're using it. This step might seem fussy, but it makes a real difference to the final presentation and texture. You should have about 24 cubes that are vibrant, firm, and beautifully red.
Step 3
If you're using mint leaves, place one small leaf into the cavity of each date half, pressing it gently so it adheres to the sticky date flesh. The mint adds a wonderful aromatic quality that cuts through the sweetness and makes these bites feel incredibly refreshing. Don't skip this step if you have mint available, as it truly elevates the whole experience and adds a gorgeous pop of green colour.
Step 4
Carefully place one watermelon cube on top of each prepared date half, positioning it so it sits securely in the centre. Gently press a cocktail stick or small skewer down through the watermelon cube and into the date to secure everything together, ensuring it goes all the way through to create a stable bite. The stick should pierce through easily without splitting the watermelon, so use a gentle but confident motion. This is where the magic happens as your simple ingredients transform into elegant little bites.
Step 5
Arrange your assembled bites on a serving platter in a single layer, giving each one space to shine. If you're using honey, drizzle it very lightly over the watermelon cubes using a teaspoon, creating delicate threads that catch the light beautifully. The honey should enhance, not drown, so less is definitely more here. For an extra special touch, finish with the tiniest pinch of flaky sea salt over the watermelon, which might sound unusual but absolutely brings out the natural sweetness of both ingredients.
Step 6
Serve these bites immediately for the best texture contrast between the chewy dates and crisp watermelon, or refrigerate them for up to 2 hours if you want them extra cold and refreshing. If refrigerating, cover them loosely with cling film to prevent the watermelon from drying out. These are perfect as a light snack, a refreshing dessert, or even as part of a mezze spread. The combination is naturally sweet, incredibly hydrating, and absolutely delicious without any fuss or cooking required.

And your Lord inspired the bees: 'Make ˹your˺ homes in the mountains, the trees, and in what people construct, and feed from ˹the flower of˺ any fruit ˹you please˺ and follow the ways your Lord has made easy for you.' From their bellies comes forth liquid of varying colours, in which there is healing for people. Surely in this is a sign for those who reflect.
