- 12 large Medjool dates, pitted and halved lengthways (soft, plump dates work best)
- 1 large cucumber, washed and sliced into 24 rounds about 1cm thick (English cucumber preferred for fewer seeds)
- 3 tablespoons raw honey, plus extra for drizzling (choose a runny, golden variety)
- 1 tablespoon water, if needed to thin the honey
- Fresh mint leaves, for garnish (optional but adds lovely colour and freshness)
- Pinch of sea salt flakes (optional, for flavour contrast)

Step 1
Begin by preparing your cucumber base, which provides the refreshing foundation for this snack. Wash the cucumber thoroughly under cold running water, then pat it completely dry with a clean tea towel, as any moisture will prevent the honey from adhering properly. Slice the cucumber into 24 rounds, each about 1cm thick, trying to keep them uniform in size so your finished bites look professional and elegant. Arrange the cucumber rounds on a large serving platter or individual plates, leaving a bit of space between each one. This is where you're building the canvas for your sweet and savoury creation, so take a moment to make it look lovely.

If your honey seems too thick even after warming, add 1 tablespoon of water and stir until you achieve a lovely, drizzling consistency. Working quickly whilst the honey is still warm and fluid, place one date half on top of each cucumber round, pressing down very gently so it adheres but doesn't squash the cucumber.
