- Extra honey for drizzling (optional)
- Kitchen equipment:
- Air fryer
- Mandoline slicer or very sharp knife
- Large mixing bowl
- Kitchen paper or clean tea towel
Directions
Step 1
Prepare your beetroot slices with care, as uniform thickness is absolutely crucial for even cooking. After peeling the beetroots, use a mandoline set to 2mm or slice them as thinly and evenly as possible with a sharp knife, this ensures every chip crisps up at the same rate. Pat the beetroot slices thoroughly dry with kitchen paper or a clean tea towel, removing as much moisture as possible, this step is essential because any remaining water will create steam instead of crispiness in the air fryer. Don't skip this drying step, it's the secret to achieving that perfect crunch you're after.
Step 2
Create your honey garlic coating by whisking together the olive oil, minced garlic, and slightly warmed honey in a large mixing bowl until everything's beautifully combined and the honey has dissolved into the oil. The warmth helps the honey mix smoothly rather than clumping. Add your dried beetroot slices to this gorgeous mixture and gently toss them with your hands, making sure every single slice gets a lovely coating, but don't be too vigorous or the slices might break. This is where the magic happens, as the honey will caramelise during cooking whilst the garlic infuses its wonderful flavour into every chip.
Step 3
Preheat your air fryer to 160°C for 3 minutes, this lower temperature is intentional as it allows the beetroot to dry out and crisp up without burning the honey coating. Arrange your beetroot slices in a single layer in the air fryer basket, making absolutely sure they don't overlap, as overlapping creates soggy spots rather than crispy chips. You'll likely need to work in 2-3 batches depending on your air fryer size, and whilst it might seem tedious, this patience pays off with perfectly crispy results. Keep the remaining slices tossed in their coating whilst you work through the batches.
Step 4
Air fry the first batch for 12-15 minutes, giving the basket a gentle shake every 4-5 minutes to ensure even cooking and prevent any sticking. Watch them carefully during the last few minutes, as the honey can go from beautifully caramelised to burnt quite quickly. You're looking for edges that have curled up slightly and turned a deeper, darker red with some gorgeous golden-brown caramelisation from the honey. The chips should feel firm when you gently tap them with a fork, though they'll crisp up even more as they cool, so don't worry if they seem slightly soft when hot.
Step 5
Transfer the cooked chips immediately to a wire rack or a plate lined with kitchen paper, spreading them out in a single layer so they can cool and crisp up properly. Season straight away with a light sprinkle of sea salt flakes whilst they're still warm, as the salt will stick better and the residual heat will help it dissolve slightly into the honey glaze. Repeat the air frying process with your remaining beetroot slices, maintaining the same temperature and timing. If you notice the later batches cooking faster, reduce the temperature slightly to 150°C, as the air fryer retains heat and gets more efficient with each batch.
Step 6
Allow your beetroot chips to cool for at least 5 minutes before serving, this cooling time is absolutely essential as they'll continue to crisp up and become wonderfully crunchy. Arrange them on a serving plate alongside fresh grapes and cucumber slices for a beautiful contrast of temperatures and textures. The cool, juicy grapes and refreshing cucumber provide a lovely balance to the sweet, earthy chips. If you fancy, drizzle a tiny bit of extra honey over the top just before serving for added glossiness and sweetness.
Step 7
Serve immediately whilst they're at their crispiest, as these chips are best enjoyed fresh from the air fryer. The combination of sweet honey, aromatic garlic, and earthy beetroot creates an incredibly moreish snack that's both nourishing and satisfying. If you have any leftovers, though that's unlikely, store them in an airtight container at room temperature for up to 24 hours, but be aware they'll lose some crispiness. You can refresh them in the air fryer at 140°C for 2-3 minutes to bring back some of that lovely crunch.
