      Ingredients

      • For the chicken:
      • 600g chicken breast, sliced into thin strips
      • 6 large cloves garlic, finely minced
      • 4 tablespoons extra virgin olive oil
      • 1 teaspoon ground cumin
      • 1 teaspoon ground coriander
      • ½ teaspoon black pepper
      • 1 teaspoon sea salt
      • For assembly:
      • 4 large flatbreads
      • 2 tablespoons extra virgin olive oil, for cooking
      • 1 cucumber, thinly sliced
      • 1 small red onion, finely sliced
      • Fresh herbs for garnish (optional)

      Directions

      1. Step 1

Begin by combining the minced garlic with olive oil in a large bowl. This is where the magic starts – the oil will help the garlic flavours penetrate the meat beautifully. Add all the spices and mix well to create your marinade.

      2. Step 2

Add your chicken strips to the marinade, ensuring each piece is well coated. Don't be shy with the mixing – really get in there with clean hands to massage the flavours into the meat. Let it rest for 10 minutes while you prepare other ingredients.

      3. Step 3

Heat 2 tablespoons of olive oil in a large, heavy-bottomed frying pan over medium-high heat (180°C). When the oil shimmers and feels hot when you hover your hand above it, it's ready.

      4. Step 4

Working in batches to avoid overcrowding (this is crucial for proper browning), cook the chicken strips for 3-4 minutes per side until golden brown and cooked through. You'll know they're ready when they're nicely caramelised and firm to touch.

      5. Step 5

While the chicken cooks, prepare your vegetables and warm your flatbreads. You can warm the bread directly over a gas flame for 20 seconds each side, or in a dry frying pan until slightly crispy but still flexible.

      6. Step 6

To assemble, lay out your warm flatbread and arrange a generous portion of chicken strips down the centre. Top with cucumber slices and red onion. If the wrap seems dry, drizzle with a little extra olive oil.

      7. Step 7

Roll up your wrap tightly, tucking in the ends as you go. If you like, wrap the bottom half in parchment paper to make it easier to eat.
