      Ingredients

      • For the base:
      • 2 large pomegranates, seeds carefully removed (about 250g of arils)
      • 30g fresh ginger, peeled and finely grated
      • 2 tablespoons raw honey, preferably Sidr honey
      • 500ml filtered water
      • Ice cubes, for serving
      • For garnish:
      • Fresh mint leaves
      • Extra pomegranate seeds
      • Thin ginger slices

      Directions

      1. Step 1

Begin by preparing your pomegranate. Score around the middle and gently break it into halves. Hold each half seed-side down over a large bowl and tap firmly with a wooden spoon, allowing the seeds to fall naturally. Remove any white pith that falls through – we want only those gorgeous ruby jewels.

      2. Step 2

Peel your ginger using the edge of a teaspoon (this works brilliantly for getting into all those knobby bits) and grate it finely. The finer you grate it, the more intense the flavour will be. Don't worry if you get a bit of juice on your hands – that's where all the goodness lives!

      3. Step 3

In a small saucepan, combine the grated ginger with 200ml of the filtered water. Bring to a gentle simmer over medium heat (180°C). Let it bubble away gently for 5 minutes until the water becomes fragrant and slightly cloudy. This is where the magic happens – you're creating a gorgeous ginger infusion.

      4. Step 4

While the ginger water is still warm (but not hot), stir in the honey until it dissolves completely. If your honey's crystallised, don't worry – the warmth will help it melt beautifully. The mixture should be clear and golden, with lovely ginger particles floating about.

      5. Step 5

Place your pomegranate seeds in a blender and pulse 4-5 times in short bursts. We're looking for the seeds to break down just enough to release their juice, but not so much that we pulverise the pips completely. You'll know you've got it right when the colour is a beautiful deep red.

      6. Step 6

Strain the pomegranate mixture through a fine-mesh sieve, pressing gently with the back of a spoon to extract all that precious juice. Don't press too hard – we want to avoid any bitterness from the seeds.

      7. Step 7

Combine the strained pomegranate juice with the ginger-honey water and the remaining filtered water. Stir gently until everything's perfectly combined. Taste and adjust the sweetness if needed – remember, you can always add more honey, but you can't take it away!

      8. Step 8

Fill your serving glasses with ice cubes. Pour your elixir over the ice, allowing it to cascade beautifully. Garnish with fresh mint leaves, a few pomegranate seeds, and a slice of ginger. Give it a gentle stir before serving – this helps the flavours marry together perfectly.
