Let them cook gently for 8-10 minutes, turning occasionally with a wooden spoon, until they're golden brown and completely soft when pressed with a fork. The garlic should smell sweet and nutty rather than sharp, this is where the magic happens. Don't rush this step, as slowly roasted garlic becomes beautifully mellow and sweet, transforming the entire dish.
Step 2
Once your garlic is perfectly roasted and golden, use the back of a fork to mash it directly in the pan until it forms a rough paste.
