Sizzling Beef & Olive Oil Burrito Recipe
Succulent beef strips marinated in olive oil and garlic create an irresistible filling that's both tender and flavourful. The caramelised onions add natural sweetness, while fresh garnishes bring brightness and crunch. This quick and easy recipe transforms simple ingredients into a memorable meal that's perfect for lunch or dinner.
Ingredients
- For the beef:
- 200g beef sirloin, thinly sliced against the grain
- 3 tablespoons extra virgin olive oil
- 3 cloves garlic, finely minced
- 1 medium onion, thinly sliced
- ¼ teaspoon sea salt
- ¼ teaspoon black pepper
- For assembly:
- 1 large tortilla wrap, 25cm diameter
- Fresh coriander leaves, for garnish
- Lime wedges, to serve
Directions
Step 1
Begin by marinating your beef. Combine 2 tablespoons of olive oil with half the minced garlic in a bowl. Add the sliced beef, ensuring each piece is well-coated. Season with salt and pepper, then let it rest for 10 minutes while you prepare other ingredients.
Step 2
Heat a heavy-bottomed frying pan over medium-high heat. Add the remaining olive oil and wait until it's shimmering - this is crucial for achieving the perfect sear on your beef.
Step 3
Add the sliced onions to the pan with a pinch of salt. Cook for 8-10 minutes, stirring occasionally, until they're soft and caramelized to a beautiful golden brown. The onions should be sweet and jammy. Transfer to a plate and set aside.
Step 4
Return the pan to high heat. Once it's smoking hot, add the marinated beef in a single layer - don't overcrowd the pan, work in batches if needed. Cook for 2-3 minutes until nicely browned, then flip and cook for another minute until just done.
Step 5
Return the caramelized onions to the pan with the beef, add the remaining garlic, and toss everything together for 30 seconds until fragrant. Remove from heat.
Step 6
Warm your tortilla in a dry pan for 20 seconds on each side until pliable. Place it on a clean work surface.
Step 7
Arrange the beef and onion mixture in the center of your tortilla, leaving about 5cm at the bottom. Don't be shy with the filling, but don't overfill or it'll be difficult to wrap.
Step 8
To wrap, fold the bottom edge up over the filling, then fold in the sides. Roll tightly from the bottom up, keeping the sides tucked in. The tighter your roll, the better it'll hold together.
